Aush Reshteh

This Aush can be named as one of the most delicious Aushs of Tehran, it is cooked in many parts of Iran and is very popular among people. To cook a delicious Aush Reshteh we need pinto beans, chickpeas, lentils, white beans, Reshteh (thin noodles), fried onion, fried garlic, fried mint, Kashk and Persian Greens for Aush. Eating Aush is very pleasant in the cold winter season.

Aush Reshteh is one of the best foods to provide sufficient humidity to your body. Aush Reshteh is one of the most famous Iranian dishes that has ancient roots and is served as one of the dishes in various religious ceremonies.

Step 1

To cook a delicious Aush, first put the chickpeas and beans into a bowl of water one night before cooking and let them soak well. In order to beat gas and bloating, it is better to change the water every few hours.

Step 2

At this step, rinse the beans and add them into a suitable pot. Then add 8 glasses of water and put the pot on the heat to cook for an hour and beans get soften well.

Step 3

After an hour, cut the greens into very small pieces, then add them to the pot. After that, wash the lentils well and add them to the pot. Do not put the pot lid after adding the vegetables.

Step 4

At this step, slice the onions, then put them in a suitable pan on the heat and add some oil. Next, saute the onion with some pepper and turmeric until it is completely caramelized, then take it out of the pan and set it aside.

Step 5

Now chop the garlic into thin slices and add it to the pan with a little oil and fry it until it gets crispy, then take them out. Then add mint and a little oil to the pan.

Step 6

Fry the mint until it turns a little dark. Next, leave some fried garlic, fried mint and fried onion for decoration and add the rest to the pot and mix to combine with other ingredients.

Step 7

At this step, pulverize the meat extract and add it to the Aush, then it let cook well with a gentle heat. After 30 minutes, cut the noodles by hand and add them to Aush.

Step 8

After noodles cook and soften, dilute half of the Kashk with a little boiling water and add to the pot. Finally, after the Aush is set, pour it into the desired bowl and garnish it with fried mint, fried onion, fried garlic and Kashk, and then enjoy it.

Tips:

1. Some Reshtehs contains salt. Therefore, when adding salt to the Aush, be careful to not over-salt it.

2. In the absence of special herbs for the Aush, having only spinach is enough to cook this food and it will be delicious.

3. Keep in mind that the taste is not complete until you add fried mint to Aush.
