How to prepare Kebab Koobideh.
To make Kebab Koobideh like restaurants, first grind lamp backstrap with fat twice to get them combined and even well.
In this step, put the ground meat in a big bowl. Then, grate the onions in medium size and take the excess water with your hand. Pour the extra juice in a small bowl and put it aside.
Put the onion pulps in the refrigerator for 15 minutes, until they turn sweet. Then add it to the meat. Add baking powder, salt, black pepper, and 2 Tbsp of brewed saffron to the mixture.
In this step, knead the mixture well until it becomes cohesive and sticky in a way that when you lift the meat up, it won’t separate into pieces and remains as a unit.
Continue kneading until get an even cohesive mixture, then put cellophane on it and let it rest for 2 hours in the refrigerator. After 2 hours, take the bowl out.
To skewer, first moister the wide Kebab skewers with onion juice. Then grab a small ball of the meat with the size of a small orange and put the skewer in the middle of the meatball. Then widen the meat around the skewer.
After skewering, make pattern on it with your finger. This helps it to cook well from inside as well as it helps with its look.
In this step, prepare the brazier with uniform light charcoal. Then order the skewers slowly on the brazier. You can also use a barbecue.
After Kebabs cooked for a bit, twist them regularly until they cook evenly.
When Kebabs are ready, melt butter using water steam and rub it with saffron on kebabs using a clean brush. This makes Kebabs look beautiful and become tasty.
