Sir Ghalieh is one of the super delicious northern dishes, requiring duck, geese or chicken meat, and then you can prepare a savory dish and enjoy.
This local Gilani dish is easy to prepare and you can have it as a main meal.
It takes 15 minutes to prepare the ingredients and an hour to cook.
Ingredients for 4 People
Chicken breast and thigh 400 g
Fresh garlic leaves 500 grams
Split peas 4 tablespoons
Bitter orange juice 3 tablespoons
Salt, black pepper and turmeric as needed
Sir Ghalieh Recipe
To prepare a fancy Sir Ghalieh, first wash the split peas, put them in a bowl containing water and let them soak for 1 night. Drain the water 2 to 3 times during this time to de-gas the peas completely.
After that, put the chicken breasts and thighs in a suitable bowl and add some salt, black pepper and turmeric, then massage the spices on the chicken to make it flavorful.
At this step, cover the dish containing the chicken and let it rest in the refrigerator for 1 hour. After this time, take out the seasoned chicken.
Now put a suitable pot on low heat and pour some liquid oil and let it heat up. Next, put the chicken breasts and thighs in the pot and sauté evenly.
At this step, drain the split peas, add them to the pot and sauté for 2 minutes along with the chickens. Then, add enough water to cover the chicken pieces and put the pot lid.
Keep the chickens and split peas in boiling water for 30 minutes until they are half-cooked. Meanwhile, wash the fresh garlic leaves, put them in a colander and let the excess water drain completely.
At this step, chop the garlic leaves finely on a cutting board. Then, put a suitable pan on low heat, pour some liquid oil and let it heat up.
Put the chopped garlic leaves in the pan and sauté for 10 to 12 minutes until the color changes. In the last 2 minutes, add turmeric and keep sautéing to eliminate the raw turmeric smell.
At this step, after 30 minutes, add the fried garlic leaves to the chicken pot, stir and let them cook for another 30 minutes to achieve consistency. After 15 minutes, add bitter orange juice.
Now let Sir Ghalieh boil to become thick. After another 15 minutes, add the eggs to the stew and stir so that the eggs cook in it, keep the stew on heat for another 5 minutes.
Finally, after 5 minutes, remove it from the heat. At the end, put Sir Ghalieh stew in a dish you want and serve it with saffron pilaf and pickled garlic.
