In this aush, in addition to rice, herbs and meat, sometimes “Garuk” (zucchini) and “turnip” are added to make it a cure medicine for colds.

Aush Ingratiates

Ground beef: 200 grams

Medium onion: 2 pcs

Fresh or dried dill: 1 tablespoon (optional)

Ash herbs (chopped coriander, chives, spinach and parsley): 200 grams

Medium grain rice: half cup

Fried onion: 1 tablespoon

Fried dried mint: 1 tablespoon

Salt, pepper, turmeric and garlic powder: as needed

Turnip: one pc (optional)

Aush Recipe
Step 1

To prepare ash-e Shoorba, first put chickpeas and black-eyed peas in a bowl of water and let them soak overnight. In order to eliminating the gas of the beans completely, change the water in the bowl once or twice.

Step 2

At this step, put mung beans, lentils, rice and bulgur wheat into a bowl of water and soak for 2 hours. Next, put the meat and sheep tail fat together with beans and chickpeas in a pot, then dice three onions finely.

Step3

Now add the diced onions to the pot along with a few cups of water, then put it on the heat to cook the beans and meat. Next, put the rice with mung beans, lentils and bulgur wheat into a large pot.

Step 4

At this step, chop the aush herbs including chives, parsley, cilantro and beetroot greens or spinach roughly and add them to the pot. Now add a few cups of water and put the pot on the heat.

Step 5

After the meat and bean mixture is fully cooked, pour half of the ingredients into the pot and mix the rest with a food processor until it becomes like puree, then add it to the pot. Now you have to stir the aush constantly to make it consistency and thick.

Step 6

At this step, chop the remaining onion into large slices, then put a suitable pan on the heat and add a little oil. Next, add onion to the pan along with a little turmeric and black pepper and fry.

Step 7

Now add the fried onion to the aush pot and mix until it is evenly spread. Finally, after the aush is completely cooked, pour it into the desired dish and decorate it as you like and serve it.

Tips:

If you decide to use turnips, add chopped turnips along with herbs to the pot.

When you add water to the aush pot, be sure to use boiled water.

To cook this aush or any aush that requires rice, try to use short grain or broken rice from the bottom of the rice bag.

Use lamb bouillon cubes to make the aush tasty.

Use onions as soon as they are chopped. Sliced or chopped onion absorbs viruses and germs quickly.
