Loobia Polo is another popular famous food in Tehran which is cooked in green bean season. However, freezers enable us to cook this food any time of year we want. The ingredients used to cook a tasty Loobia Polo are: green beans, rice, red meat, onion, turmeric, salt, oil and tomato paste. Stay with us to prepare this dish.
First wash the green beans and drain the excess water, then chop and put them aside.
In this step peel the onions and garlics and dice them into small cubes. Then, put a large pan on the heat, add some oil and heat it up.
Next, add the onion into the pan and sauté until it becomes light. Then, add garlic and sauté until it becomes caramelized. Now wash the tomatoes and dice them into small pieces and put them aside.
After the onion and garlic became caramelized, add ground meat and sauté the mixture continuously until the color of the meat changes. Then, add diced tomatoes and mix them well.
Add tomato paste into a small pan and sauté continuously to remove the bad scent and the oil becomes red. Then add it to the bean mixture in the pan.
Now, turn off the heat and let the mixture cool. Then, fill half of a pot with water and add a pinch of salt.
You can add some turmeric into the water if you want to have a semi-yellow better color rice. Put the pot lid and increase the heat to boil the water.
In this step, wash the rice and drain the excess water. Add it to the boiling pot and wait for 6 to 7 minutes. Then check its cooking rate.
Drain the rice, and then pour some oil into the bottom of the pot.
Add 1 to 2 scoops of rice into the bottom of the pot, then add some of the green bean sauce on it, then some rice, and again some of the sauce on top of it.
After adding rice and sauce into the pot layer by layer, put the pot lid and put it on the heat. First, on high heat for 3 to 5 minutes. When the pot filled with steam, then lower the heat and let it cook gradually.
When the Loobia Polo is completely cooked and ready, mix the rice and sauce in the pot very slowly, then pour a little oil on it and serve the meal.
