GOBOLI GOOSHT BANDAR ABBAS

Goboli Goosht is one of the famous dishes of Hormozgan, full of special fragrant spices, whose smell spreads everywhere. Cooked, suited meat, fried potatoes, cooked chickpea, golden onions, and rice, cooked with broth and various spices such as cardamom, cloves, dried lemon, southern spices and pepper are the ingredients of this delicious Goboli. Some cook it with chicken and some add raisins too.

Goboli polo is a kind of pilaf or steamed rice, cooked with broth. This pilaf is a type of mix pilaf combined and served with meat, chickpea, potatoes, and raisins and is so delicious. It is good to know that chickpea increases its nutritional value. Since the rice is cooked with broth, it absorbs all the taste and properties of the meat. Side dishes can be mixed with rice or be separately, depending on taste.

Ingredients for Goboli Goosht for 4 people:

Rice: 4 cups

Mutton: 250 grams

Onions: 2pcs

Potatoes: 2 pcs

chickpea: 1 cup

Tomato paste: 1 tablespoon

Raisins: ½ cup

Cinnamon stick: 1 pc

Dried lemon powder: ½ teaspoon

Pilaf spice: 1 tablespoon

Salt and pepper: as needed

Turmeric and oil: as needed

Goboli Polo Recipe:
Step 1

To have a great delicious Goboli Polo, first wash and peel the onions. Then take a pot and heat it with a little oil. Now sauté sliced onions in oil until they become light and golden.

Step 2

Add the meat and sauté until its color changes. Then add black pepper and turmeric and keep heating until you feel the aroma. Then add cinnamon stick and a little water until it cooks well.

Step 3

Add salt at the end of cooking. When the meat is fully cooked, strain the broth. Add cardamom, black pepper, pilaf spice and dried lemon to the broth and let it come to boil. Wash the rice and soak in salt water.

Step 4

When the broth boils, strain the rice and add it the broth. Add enough water to cover the rice as the size of a knuckle. When the water almost evaporates, add a little butter to the rice and then wash and peel the potatoes.

Step 5

At this step, dice the potatoes. Take a pan and heat it with a little oil until the oil is hot. Fry the potatoes and take them out.

Step 6

At this step, cut another onion into medium slices, fry it, and remove from the pan. Chop the meat and sauté it in the same pan. Cook the soaked chickpea with a little water.

Step 7

Sauté the meat with some dried lemon powder, salt and a little tomato paste. Add washed raisins, sauté a bit and remove from the heat. Put the meat, chickpea, raisins, potato and golden onion mixture on the rice. If you want, you can add cardamom and clove powder on the rice. Be sure to try this delicious Hormozgani dish and enjoy.
